Pinot Filet is a signature Far Western entree created in 1995 by Chef Roseanne Ruiz for a Righetti family wedding. The many culinary and viticultural elements that define Santa Maria Valley cuisine come together perfectly in this delectable dish. It is a red oak grilled 6 or 12 oz filet, served over grilled polenta, with Pinot Noir mushroom reduction sauce and crisp tobacco onions. $39 or $50.

The market fish this weekend is red oak grilled salmon. All fish served at he Far Western is wild caught and fabricated in house. MP.
