The many culinary and viticultural elements that define Santa Maria Valley cuisine come together perfectly in this delectable dish. It is a red oak grilled 6 or 12 oz filet, served over grilled polenta, with Pinot Noir mushroom reduction sauce and crisp tobacco onions. $39 or $50.
